Brussel sprouts have an unfortunate bad reputation. I add crispy, thick-cut applewood smoked bacon to turn brussel sprouts into a fabulous, delicious side. I like to serve this dish with either poultry of pork.
Ingredients:
1 pound of brussel spouts
1/4 pound of thick-cut bacon (I prefer the applewood smoked variety), diced
1/4 cup chicken stock
kosher salt
fresh ground black pepper
Instructions:
- Fry the bacon in a medium sauce pan over medium heat until the bacon is crisp. Add the brussel spouts and coat with bacon grease.
- Add the chicken stock, reduce heat to medium low. Cover and cook for 10-12 minutes, or until brussel sprouts are tender. Add salt and pepper to taste. Serve immediately.
